6 c chicken broth
2 TB olive oil
1/4 c onion, diced
1 c pearl barley
1/2 c white wine
3 TB butter
2 c assorted mushrooms, sliced thinly

Directions:
Directions:
In medium pot, heat broth to a simmer and keep warm.
In Dutch oven, sauté onion in oil until softened. Add barley, sauté 3 minutes. Add wine and cook until almost absorbed. Add 4 c broth, turn heat down to a simmer, cover and cook until tender. Occasionally add broth to keep it slightly saucy. (~40 minutes)
Sauté mushrooms in butter (~10 minutes). Add to barley. Salt and pepper to taste; serve hot.

We prefer this recipe done in a Dutch oven, not in the pressure cooker because the texture changes.
