1 Chicken
2 lemons
11 garlic cloves minced
2 Tbsp Greek Oregano
1 C Olive Oil
6 medium sized Yukon Gold Potatoes
Kosher Salt
Pepper

Directions:
Directions:
Preheat oven to 350º

Trip the tips of the chicken wings and any excess fat
Split chicken in half; place both halves bone down on a sheet pan
Squeeze all of the juice of 1 lemon onto the chuck. Rub over both sized
Pour ¼ Olive oil and massage into chicken as well
Genourly season with salt and pepper and ½ of Oregano
Add 5 cloves of garlic to the chicken
Peel potatoes and cut them into quarters. Place in bowl.
Add the remaining olive oil, oregano, lemon juice and garlic to the bowl with the potatoes. Toss until coated well.
Pour the potatoes onto the sheet pan with the chicken along with all sauce and seasoning
Roast at 350º for 1 hour and 15 minutes and the chick is golden brown and potatoes are crispy
