Salmon
2 Salmon Fillets
1 whole lemon juice
½ tsp. of lemon zest
½ tsp. of kosher salt
½ tsp. fresh chopped ginger
½ tsp. fresh chopped garlic
½ tsp. paprika or cayenne
½ tsp. fresh ground pepper
1 tbsp. of olive oil

Sauce
½ cup of cream
1 tbsp. of ghee
1 whole lemon juice
½ cup of chicken or vegetable stock or white wine
½ tsp. fresh chopped garlic
¼ tsp. paprika
½ tsp. fresh ground pepper
½ tsp. of kosher salt
1 finely chopped red onion
1 tsp. of freshly chopped dill or parsley
2 tbsp. of cold unsalted butter
1 tbsp. cilantro

Sauce
1. Marinate salmon in all the ingredients under Salmon for 15 minutes.
2. In a heavy non stick skillet, heat ghee or clarified butter and add onions and chopped garlic.
3. Add vegetable or chicken stock and lemon juice and let it boil for a few minutes until it is reduced in volume.
4 Add cream, parsley or dill, paprika, fresh ground pepper, kosher salt and boil until it has reduced in volume.
5. Add cold butter and mix with the cream until it has melted. Cook for another 2 minutes.
5. Take off the heat.
6. Heat a grill skillet or heavy frying pan on medium high and add 1 tbsp. ghee.
7. Add the salmon with skin side down and cook for about 5-6 minutes.
8. Turn the salmon on the other side and cook for another 5 - 6 minutes.
9. Plate the fish on a plate and pour the sauce over it.
10 Garnish with cilantro.

Serve fish with grilled asparagus and mashed potatoes.
