1 Tbs vegetable oil, 1 medium onion, sliced into half-moons
Salt, ¼ teaspoon cayenne pepper, 1 large egg
2 cups waxy potato, with skin, diced into ½-inch pieces

Directions:
Directions:
Add oil to a large nonstick skillet, medium heat. When hot, add onion and a dash of salt. Stir until onion begins to soften, about 1 min. Add potato and cayenne to pan, lower heat. Cook, stirring often, until tender, caramelized and lightly browned, 30 min. Push potato and onion hash to one side of pan. Increase heat. Crack egg into pan, cook to taste. Spoon potatoes and onions on plate. Top with egg.

When I am in other countries, I eat the cuisine of that country, avoiding food I eat in the U.S. This allows me to savor the full range of a country's/culture's food in the context in which it was created. I have long ago sampled American Fast Foods in other countries allowing me to appreciate the near perfect consistency in their basic items and their specialty items in response to local tastes and cultural requirements.
Buongiorno - Exception to eating only local is at a hotel with International clientele and a breakfast buffet. When the grill is turned on and others line up for their made-to-order omelettes, I order two eggs over easy placed on hash browns or whatever potatoes the hotel offers in its breakfast buffet. This is a Sunday morning favorite at the DeGregori house.
