6 medium onions cut in half
1/4 cup butter
1/2 t salt
1/2 t sugar
3 T all purpose flour
1/4 t thyme leaves
1/4 t white pepper
1 bay leaf
5 1/4 cups (or 3 cans ) chicken or beef broth
1 cup water

Directions:
In bowl of food processor insert slicing blase and cover and slice onions. In a 3 qt sauce pan, melt butter over medium heat, Stir in onions, salt & sugar. Cover, cook 15 minutes, stirring occasionally. Remove cover and turn heat to llow and cook stirring frequently, about 30 minutes or until onions are brown. Stir in flour, thyme and pepper. Add remaining ingredients. Cover and simmer 30 - 60 minutes.

FRENCH ONION SOUP:
Place toasted chunks of French bread in bottom of individual soup crocks. Fill with hot onion soup. Cover top 0f soup with slice of swiss or mozzarella cheese. Place under broiler and broil until cheese melts. Serve immediately.
