Ingredients:  
Best when all ingredients are finely chopped.
1/2 # salt pork diced
4 med onions, chopped
4 stalks celery, chopped
2 green peppers, chopped
12 medium potatoes diced 3/4"
6 cans chopped clams (or 6 large chowder clams chopped)
6 cups clam juice
1 t celery salt
2-4 bay leaves
1 t thyme pepper to taste

6T butter
6T flour
2 pints 1/2 & 1/2

Directions:
Directions:
Fry salt pork until crisp; remove pork and reserve.
Add onions, celery and peppers to hot fat. Cook until vegetables are transparent.
Add potatoes, clams and clam juice. Cook until potatoes are tender over medium heat.
Season with bay leaves, thyme, celery salt and pepper.

Melt butter and stir in flour. Gradually add 1/2 & 1/2 stirring until smooth.
Blend white sauce into chowder. Cook 5 minutes.
Let stand 3 or more hours to blend flavors.

Heat thoroughly before serving.

Garnish with reserved salt pork
