3½ cups of all purpose flour
1 packet of Active dry yeast
1⅛ cup of warm water
1 tbsp. of salt
1 tsp. sugar
2 tbsp. of extra virgin olive oil


Chicken Tikka
1 boneless chicken breast cut into small bite size pieces
1 tbsp. chicken tikka paste
2 tbsp. of yogurt
1 tbsp. of lemon juice
½ tsp. garlic paste
½ tsp. ginger paste
2 tbsp. oil

Pizza sauce
1 can of 28 oz. tomato sauce
2 cloves chopped garlic
1 tbsp. chopped basil
2 tbsp. olive oil
1 tbsp. of chopped oregano
1 tsp. of dried oregano
½ tsp. of dried chili flakes
½ tsp. of salt
½ tsp. black pepper
1 tsp. white vinegar


Toppings
1 sliced onion
½ cup sliced mushrooms
1 cup grated Mozzarella cheese
½ Chopped green bell pepper

Pizza Dough

1. In a bowl add water and dissolve the contents of yeast package. Mix with a fork and keep aside for about 5 - 6 minutes.
2. In an electric mixer, using a dough hook attachment, add 3½ cups of all purpose flour, sugar, salt and olive oil and start the mixer on medium
3. Stir the yeast mixture which should be a little creamy and add to the flour.
4. Mix on medium until all the flour and liquid come together to form a dough.
5 Turn to low and keep on mixing for a another 10 minutes.
6. If the dough is too sticky add a little flour. If it is too dry add a tsp. of water at a time
6 Transfer to a clean surface and knead for a few minutes on a floured surface to stop sticking.
7. Take the dough and fold its edges under to create a smooth outer skin on top of the dough ball
8. Grease a bowl with olive oil. Place the dough in the bowl coating it all around with oil. Cover with a cloth and set it aside in a warm place for about 2 hours to rise.

Chicken
9. Marinate the chicken with chicken tikka paste, garlic and ginger, lemon juice and yogurt. The tikka paste should have the salt. Keep aside for about 15 minutes.
10. Heat a grill pan on medium high and cook the marinated chicken pieces on both sides.
11. Remove the grill pan from the stove and let cool before cutting into small pieces.

Pizza Sauce
You can buy a store bought pizza sauce or make it homemade in the following manner:
12. Heat olive in a saucepan and add chopped garlic and sauté for a minute.
13 Add the all the herbs, oregano, basil, dried oregano, chili flakes, vinegar and salt.
14. Let the sauce simmer on low heat for about 15 - 20 minutes.
15. Taste to ensure that it has enough salt.

Ensemble the pizza
16. Preheat the oven to 450ºF.
17. In 2 greased 12 inch pizza pans spread pizza sauce and top with remaining ingredients including the chicken tikka.
18. Bake individually for about 15 minutes or until the cheese starts getting bubbly.

The sauce and the chicken tikka can be prepared ahead of time. For toppings you can use any vegetables of your preference.
