Turkey Tetrazzini Recipe

2 c penne pasta
2 c chicken broth (divided)
¼ c flour
2 Tbs sherry
1½ c mushrooms (I use onion instead)
1 can evaporated skim milk
⅛ tsp black pepper
2 c cooked turkey or chicken
¼ c parmesan cheese

Directions:
Directions:
1. Cook pasta, drain, set aside

2. Mix ½ c broth and flour with a fork

3. Pre heat oven to 350º

4. Saute onions (or mushrooms) until they begin to soften. Add sherry. cook another minute or two.

5. Add remaining broth, evaporated milk, and pepper to the skillet. Stirring frequently until mixture comes to a boil. Add flour mixture. Cook several minutes until slightly thickened.

6. Remove skillet from heat. Add pasta and turkey. Mix well.

7. Coat an 8X12 baking dish with spray. Spread the pasta mixture evenly in the dish and sprinkle with parmesan cheese.

8. Bake for 20 minutes until hot and bubbly
