1 cup sugar
3 eggs
⅔ cup pumpkin
1 teaspoon lemon or orange juice
¾ cup sifted flour
1 teaspoon baking powder
2 teaspoons cinnamon
½-1 teaspoon ginger
¼-½ teaspoon nutmeg
½ teaspoon salt
1 cut chopped nutmeats

FILLING:
1 cup powdered sugar
1 8-ounce package softened cream cheese
4 tablespoons butter
½ teaspoon vanilla

Directions:
Directions:
Beat eggs on high speed for five minutes. Gradually beat in sugar. Stir in pumpkin and lemon juice.

Sift flour, baking powder, cinnamon, ginger, nutmeg and salt, then fold in pumpkin mixture.

Spread in greased and floured jelly roll pan. Top with nuts.

Bake at 350 degrees for 15 minutes.

Turn out on towel and sprinkle top with powdered sugar. Roll cake and towel as for jelly roll and cool.

Filling:
Combine above ingredients as shown above and mix well.
Unroll cake and spread the filling.
Roll back up and store in the refrigerator.

Note: This also freezes well for a short period of time..
