4-6 Tbl lite oil
2 onions, chopped
4 garlic cloves, pressed
8 Tablespoons flour
1 teaspoon cumin
1 teaspoon black pepper
6 cups chicken broth
3 cups cubed pork (tastes best with less than more meat)
4 cups roasted diced green chilies
2 teaspoon oregano
2 teaspoon salt

Directions:
Directions:
Heat the oil over medium heat. Add onion and garlic. cook over medium heat but do not brown (about 5 minutes).

Mix flour, cumin and black pepper and add to the onion mixture. Cook stirring constantly for 2 minutes to cook the rawness out of the flour. When the roux just begins to color, remove it pan from heat and gradually whisk in broth to prevent lumps.

Add the remaining ingredients and return to stove, Bring to a boil and then cover and cook on low for 30 minutes. If the chili is to thick, dilute with broth.
