Gnocchi

2 large baking potatoes
1 vegan egg (Ener-G egg replacer or Bob Mills brand)
2 cups white flour(more if needed)
1 tsp garlic powder
1 tsp salt
1 tsp seasoned pepper(optional)
1 tbsp olive
several tbsp of water
1 tbsp vegan butter (for bowl)

Sage brown butter sauce

1/4 cup vegan butter
8 fresh sage leaves
3 cloves garlic minced
1/2 of a lemon squeezed
1/4 cup veggie broth
1 container follow your heat parmesan

Peel and cubed potatoes. Boil them until very tender. Remove from heat and let cool a bit.Drain and mash them well.In a stand mixer using the dough hook mix all ingredients adding water and more flour as needed. The dough is done when it starts to pull away from bowl and is smooth and not dry or sticky.Keep adding a little water and flour at a time, until you get that silky smooth texture.If doing it by hand kneed on a well floured surface, again till you get the right texture.Roll out several pieces on a floured surface in a snake like form about 1 inch thick.Using a dough cutter or sharp knife cut pieces into your desired shapes. I cut mine just in simple rectangle pieces . You can use a gnocchi board or a fork to make lines if so desired.Drop into rapidly salted boiling water. Gnocchi is done when they float to the top.Take a slotted spoon and as they come to the top remove a put in a large bowl with a tbsp of butter and set aside.Now make the sauce.In a large fry pan cooked the butter on med heat until browned. Add the sages leaves and cook until they begin to sizzle. Remove from heat add garlic and the rest of the ingredients except parmesan .Toss in the gnocchi and vegan parmesan and put back on heat on very low just till its all warmed.
