2 (8 oz.) packages cream cheese
1/2 cup jarred caramel, divided
1 Tbsp. lemon juice
1/2 tsp. ground cinnamon
1/4 tsp. nutmeg
1/4 tsp. salt
1 cup shredded sharp Cheddar cheese
2 Granny Smith apples, finely chopped
2 cups chopped pecans
1 package crackers, for serving

Directions:
Directions:
In a large bowl, beat together cream cheese, 1/4 cup caramel, lemon juice, cinnamon, nutmeg and salt.

Fold in Cheddar and apples. Scoop mixture onto a sheet of plastic wrap and shape into a ball. Let freeze for about 30 minutes.

Spread pecans on a plate. Roll cheese ball in pecans and transfer to a serving platter. Drizzle with remaining caramel and serve with crackers.
