1 pkg great northern beans
1 onion, chopped
1 ham bone or smoked hocks
Salt white pepper
Dash tabasco (if desired)
Water to cover

Directions:
Directions:
The night before: Sort beans (beans will often have small pebbles in the bag), rinse and cover with water. Soak over night. The next day, drain.

Place beans in a large pot or use a slow cooker.

Add ham, onions, salt, pepper, tabasco (if using) and cover with water.

Cook on low until beans are tender (6-8 hours on low)

Remove the ham bone and pick off the meat: return meat to beans.

Serve with corn bread.

You can also use pinto beans with a spoonful of lard, mmmmmm. Ham bone is optional.
