4 cups of grated carrots
2 tbsp. of unsalted butter
3 tbsp. sugar
¼ tsp. of saffron
2 tbsp. of raisins
1 cup evaporated milk
1 cup of whipping cream
1½ tbsp. of powdered milk
1½ tsp. of cardamom powder
½ tsp. of nutmeg powder
3 tbsp. of slivered almonds
3 tbsp. of slivered pistachios

Directions:

1. Melt butter in a non stick saucepan, add grated carrots and stir with a spatula.
2. Cook for about 20 minutes and add 1 tsp.. of cardamom powder and keep mixing.
3. Add evaporated milk and whipping cream and lower the heat. Cover for about 15 minutes.
4 Add 2 tbsp. of sugar and keep stirring occasionally.
5 Next add the powdered milk and keep stirring until the liquid dries out.
6. Taste the carrot mixture to see if it needs more sugar. Add more if needed according to your taste.
7. Add 1 tbsp. of almonds, 1 tbsp. of pistachios and raisins to the carrots and cook for another 5 - 6 minutes on low heat.
8. Serve on a plate, garnish with almonds, pistachios, cardamom, nutmeg and saffron.
