1 lb fresh jumbo lump blue crabmeat, well picked
2 ribs celery and 1 medium Vidalia onion; minced & mixed
1 T each, salt and black pepper
3/4 c apple cider (or white) vinegar
1/2 c extra light olive or canola oil

Layer onion mix and crab in pan. Sprinkle with seasonings, oil and vinegar. Cover in fridge 2 to 12 hours, Toss; serve with saltines & lemon. (Hills beachgoers still LOVE this 71-year-old Mobile dish.)
