1 cup raw Spanish peanuts
1 cup sugar
½ cup light corn syrup
⅛ teaspoon salt
1 teaspoon butter
1 teaspoon vanilla
1 teaspoon baking soda

Directions:
In a 1 ½ quart casserole dish, stir together the peanuts, sugar, syrup and salt. Cook 8 minutes on high in microwave oven, stirring well after 4 minutes. Stir in butter and vanilla. Microwave on high 2 minutes longer. (If the mixture is getting darker than you think peanut brittle should be, stop cooking--it is ready for the baking soda.) Add baking soda and quidkly stir until light and foamy. Immediately pour onto greased baking sheet and spread out a little. When cool, break into small pieces. Store in airtight container or ziploc bag. This freezes well.

I include this in the goodie plates I give to neighbors for Christmas and I always get compliments on it. Do not double the recipe as it will not cook properly. I have found if I use sugar that has been in my cabinet for quite a while, the brittle gets too dark and tastes burnt. It is best to use sugar that has been recently purchased.
