2 T. olive oil divided
1 6-oz. skinless boneless chicken breast cut into 2 inch pieces
2 T. soy sauce divided
4 eggs
1 T. dark sesame oil
¼ C. thinly sliced green onions
1 garlic clove minced
2 C. cooked jasmine rice
1½ C. matchstick cut carrots
1 T. sesame seeds
¼ tsp. salt

1. Heat 2 T. olive oil in a large nonstick skillet over medium heat. Add chicken and cook until done. Remove from pan and cut chicken into small pieces. Combine chicken and 1 T. soy sauce in small bowl and set aside.

2. Wipe pan with paper towels. Heat 1 tsp. olive oil in pan over medium heat. Add eggs and stir fry 2 min. or until scrambled, stirring constantly. Remove eggs from pan and set aside.

3. Wipe pan with paper towel. Heat remaining 1 T. olive oil and 1 T. sesame oil in pan over medium-high heat. Add green onions and garlic to pan and cook 20 seconds. Add rice and carrots; cook one minute stirring occasionally. Add chicken, scrambled eggs, remaining 2 T. soy sauce and sesame seeds; cook 5 min. or until rice begins to brown and becomes crunchy, stirring every 30 seconds. Stir in salt.
