4 T Almond Flour
8 tsps (2 T + 2 tsps) unsweetened cocoa powder
1/2 a banana, mashed, or 3 dates, crushed*
Pinch salt
¼ tsp vanilla
2 T butter
2 large eggs, beaten

Directions:
Directions:
1. Heat oven to 350º
2. Grease two ramekins (about 3.5 inches) or mist with vegetable oil spray
3. Stir together the dry ingredients in a small bowl*
4. Add the wet ingredients and stir together until thoroughly mixed and pour into prepared ramekins.*
5. Bake 12-15 min until top is set. (The shorter the time, the better the “lava.” A longer time bakes the whole thing and doesn’t leave much lava.)
6. Allow to cool slightly before serving.

*Short cut: use a food processor, putting in the bananas or the dates first. This does a great job of getting those two ingredients well-mashed. Throw in the remaining ingredients and blend until smooth.

Make it even better by topping with sugarless whipped coconut cream:
Put a can of coconut milk in the refrigerator overnight.
The next day, scoop out the thickened cream into a bowl.
Add cinnamon and vanilla.
Whip until thick.
