1 pound chicken breast or thighs, boneless and skinless
1 cup dill pickle brine
1 1/2 cups milk
1 large egg
1 1/4 cups flour, all purpose preferred
2 tablespoons powdered sugar
1 teaspoon garlic powder
1/4 teaspoon chilli powder
2 teaspoons table salt
1 teaspoon ground black pepper
1 teaspoon dried parsley flakes
1 teaspoon hot sauce
Oil for frying

Cut chicken into approximately 1 inch pieces.

Combine 1/2 cup milk and pickle brine in a one gallon zip top bag. Add chicken to marinade, remove air from the bag and seal. Allow to marinate for at least 30 minutes.

Combine flour, pepper, salt, garlic powder, parsley, and chilli powder together, set aside.

Heat oil to 165º

Whisk together 1 cup of milk, egg, and hot sauce. Drain marinaded chicken well, add to milk and egg mixture. Drain chicken well and toss into flour mixture.

Add to hot oil and cook until coating is brown and chicken is done. Work in batches rather than crowd the pan.

Serve with your choice of sauce.
