⅔ c unsweetened cocoa
3 c sugar
⅛ t salt
pinch cream of tarter
1 ½ c heavy cream or evaporated milk
1/4 c butter
1 t vanilla
1 c walnuts

Directions:
Directions:
Mix cocoa, sugar, salt, cream of tarter and milk in large pan. Bring to a boil cook to soft ball stage 234º. Do NOT stir during this process. Remove from heat. Add vanilla, butter and nuts. Beat until fudge thickens or looses its gloss. Quickly pour into pans lined with parchment paper and cool.
