Sift together:
1 Cup flour
1 teaspoon soda
1 teaspoon cinnamon
¾ teaspoon nutmeg
¼ teaspoon salt

Cream together:
½ Cup shortening and 1 Cup sugar add 1 egg and 2 Cups grated apple with peel. Mix in dry ingredients.

Pour into Greased 8x8x2 inch pan. Bake 20-30 minutes at 400 degrees.

Rum Sauce: Mix ½ Cup butter, 1 Cup sugar, ½ Cup light cream.

Cook, stirring, until slightly thickened about 10-15 minutes. Cool slightly.

Add dash of nutmeg, 1 tsp. vanilla and 2 or 3 T. rum (or use 1T rum flavoring, which I prefer). Serve over apple pudding.

This is a recipe that my Great Auntie, Elsie Cook (Aunt Rita’s adoptive mother, who was actually her aunt) used to make especially at Christmas time.

Elsie Cook (Elsie Spaht) was married to Vernon Cook, the brother of Aunt Rita and Grandpa Dusty's Mom, Claire Cook Parsons (my paternal grandmother). Aunt Rita went to live with Elsie and Vern after Grandma Claire died, she was maybe 4.
