2 Tbsp vegetable oil
1 cup long grain rice (uncooked)
1 onion, chopped
2 or 3 eggs, whisked
1 tin consomme
1 cup chicken or ham or mushrooms
soy sauce to taste
salt and pepper

Directions:
Directions:
Put oil in a frying pan over medium heat. Add rice and fry until golden and each grain is coated. Add the onion and fry until golden. Place in a baking dish. Add eggs to the frying pan and scramble into pieces. Add to baking dish. Add the soup, 1/2 tin of water, soy sauce and chicken to the dish and mix thoroughly. Bake, covered at 350º for 1 1/2 hours.
If you are adding mushrooms, fry them in butter before placing in the baking dish.
