1 lb. Italian bulk sausage, sweet or hot
10 oz. sharp cheddar cheese, grated
2 c. baking mix (like Bisquick)

Directions:
Directions:
Allow sausage and cheese to come to room temperature. Preheat oven to 400º F. Line a baking sheet with non-stick aluminum foil. Place all ingredients in a large mixing bowl and mix well.
Roll mixture into 1 inch balls and place on baking sheet. Bake for 10 to 12 minutes until golden brown. Serve warm with your choice of dipping sauce.

This is easily done in a Ninja food processor fitted with the plastic dough blade. The mixture is quite dry but will press together with your fingers and the fat from the sausage kind of sticks it together as it bakes. Goes well with marinara sauce, honey mustard, or a spicy ketchup dip.
