4 sandwich rolls
1/2 cup or so good olive oil
1/4 cup or so good wine vinegar
1 small bunch green onions, thinly sliced
2 or 3 ripe tomatoes, diced (or if not in season, use canned)
4 sweet Italian sausages

Directions:

Split the rolls
Saute the sausages until done in the middle
Mix together the vinegar, oil, tomatoes, and onion, season with salt and pepper to taste
Place a sausage inside a sandwich roll and add enough dressing to soak into the bread, to taste

This makes a wonderful "go to" for a quick meal. Goes with potato or macaroni salad, coleslaw. beans. etc, or, it stands on its own. Be sure to choose a rather firm crusty roll so that it holds together under assault from the oil and vinegar dressing.
