3 Tbs. olive oil
1 onion, chopped
1 lb. fresh mushrooms, cleaned and chopped
2 cloves garlic, minced
1/2 tsp. each dried basil, oregano and parsley
2 1/2 c. tomato purée
a twist of lemon peel
1 bay leaf
salt and pepper to taste
1 c. red wine
A few drops of Worcestershire sauce (optional)

In a skillet, heat the olive oil and cook the onion for 8 minutes. Add the garlic and mushrooms, and cook another 8 minutes. Add the dried herbs, tomato puree, lemon peel and bay leaf. Season with salt and pepper. Simmer 5 minutes. Add red wine, and simmer the sauce for another 20 minutes if it’s to be baked (with lasagna or manicotti), or an hour if intended for spaghetti. Discard the bay leaf and lemon peel before serving, and add a few drops of Worcestershire sauce.

Note: Make 1½ recipes if you plan to use this sauce for the Spinach Lasagna detailed elsewhere in this family cookbook.
