3 oz. each white cheddar, yellow cheddar and cream cheese, cut into small pieces
6 green onions, white parts only, finely chopped
2 Tbs. butter, softened
2 Tbs. dry sherry
1 tsp. Worcestershire sauce
1 tsp. Dijon-style mustard (optional)
Dash hot pepper sauce (optional)
2 Tbs. finely chopped chives

Directions:
Directions:
Place all ingredients, except chives and crackers, in a food processor or blender; process until smooth. Add chives; pulse to mix in. Cover; refrigerate. Allow spread to soften at room temperature before serving.

Serve with assorted crackers.

Susan suggests: "After I mix it together, I use plastic food wrap to line any container or any round bowl so the mixture is shaped round for the top, but flat for the bottom, when removed from the mold. Then I place in the refrigerator."
