"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
8 oz. dry elbow macaroni
2 T. olive oil
1 lb. lean hamburger
1 yellow onion
2 T. minced garlic
1 28 oz. can diced or petite diced tomatoes (preferably Del Monte with garlic & olive oil)
1 small can tomato sauce
1 tsp. oregano
1 tsp. basil
1 T. Italian seasoning or Penzey's Tuscan Sunset
salt and pepper to taste

Directions:
Directions:
Cook the elbow macaroni until very al dente -- it will cook more after mixed into the beef mixture and you don't want it to be mushy.
Brown the hamburger in in a large sauce pan, drain off excess grease. Add olive oil to pan along with onions and garlic and cook until onions are translucent. Add remaining ingredients, stirring to combine, and simmer until tomatoes are cooked (about 30 minutes). Stir in the cooked pasta and heat through. Serve immediately with grated Parmesan cheese.

Personal Notes:
Personal Notes:
From my mother's kitchen to mine and now to yours. There was never a written recipe in our family; I just watched Mom make it and then made it in my kitchen, too. I have no clue where the name slum gully came from but I have also heard it referred to as slumgullion. Kids love it (even mine), it's quick, easy, and inexpensive to make, and was always a welcome sight on our dinner table.
