1/4 c. oil
2 cloves garlic, minced
1 large onion, diced
1 large green bell pepper, diced
3 stalks celery, chopped
1 lb. conecuh sausage
1 lb. chicken tenders or thighs
1 c. ham, chopped
1 28 oz. can diced tomatoes
1 15 oz. can tomato sauce
2 bay leaves
2 c. chicken broth
2 tsp. Cajun seasoning
1/4 tsp. crushed red pepper
1 tsp. salt
1/2 tsp. pepper
1 1/2 c. rice, uncooked

Directions:
Saute onion, pepper, celery, chicken, and sausage in oil in heavy stock pot until chicken is close to done. Add add remaining ingredients. Cover and simmer on medium low heat for 45 - 50 minutes until rice is tender. Add additional chicken broth if needed.
