8 small to medium new potatoes
1 small onion, minced
2 T. olive oil
salt and black pepper to taste

Directions:
Directions:
Cover potatoes with water in a medium saucepan. Bring to a simmer and add 1 T. Kosher salt. Cook until just tender (10 to 15 minutes). Drain and set aside.
Preheat broiler. Place potatoes on a lightly greased or foil lined baking sheet. Using a large fork or potato masher, press down on each potato firmly, partially crushing them. Drizzle the tops of the potatoes with olive oil and broil until brown and crusty. Sprinkle with onions, parsley, salt and pepper before serving.

These can also be baked at about 450 degrees instead of using the broiler. I usually prefer to do that and put the onions on top while baking.
