1 whole baking potato per person
1 thinly sliced garlic clove per potato
olive oil
melted butter
salt and pepper

Directions:

Preheat oven to 400º F.
Cradle each potato between two chopsticks or the handles of two wooden spoons to keep it from rolling and to stop the knife from slicing clear through the potato.. Make parallel vertical slits (top to bottom) about ¼ inch apart. Place garlic slices between slits. Toss the whole potato in a medium bowl with butter and olive oil. Place on a baking sheet lined with foil and sprinkle generously with salt and pepper. Bake until the potato fans out and gets brown on top (about 1 hour).

The potatoes may be topped with shredded cheese, buttery bread crumbs, sliced almonds, crispy bacon bits, or grated Parmesan the last few minutes of baking. Whatever you want on your crispy baked potato is fair game. Makes an impressive side on any buffet! Serve with extra butter and sour cream.
