All vegetables are fair game and add to the variety. Use a variety of the ones you like most. Some of our favorite ingredients: Romaine lettuce, baby carrots, cherry tomatoes, cheese, avocado, raisins, sunflower and pumpkin seeds, almonds, pecans, walnuts, cucumber slices, radishes, olives, broccoli and or cauliflower pieces, beans, beets, tiny peas, and cottage cheese. Topping off the salad will be either roasted chicken pieces, shrimp, steak or ham chunks, tuna fish, or sliced beef. (We often use meat or chicken left over from a previous meal where we’ve frozen it to use for a salad topping in the future)

Darlene’s salads are really good, but they are more like a creative salad masterpiece. You’d think it was from a good salad bar line where someone had fun putting it together. It’s packed with love, variety, and always interesting.

For lettuce, we usually pick up the multi packs of Romaine Lettuce from Sam’s Club or Costco. To get started she’ll layer the lettuce on our salad plates. Then begin adding the toppings. One at a time. It’s always different, depending largely what we might have on hand, in season, our just hungry for. All vegetables are fair game, and add to the variety. But usually our dinner salad includes baby carrots., cherry tomatoes, a few slices of cheese, avocado, raisins, sunflower and pumpkin seeds, a few almonds, pecans, or walnuts, some cucumber slices, radishes and olives. If you like cottage cheese, a small scoop of it. Topping off the salad will be either some cubed or sliced roasted chicken pieces, shrimp, steak or ham chunks, tuna fish, or sliced beef. (We often use meat or chicken left over from a previous meal where we’ve frozen it to use for a salad topping in the future)

For salad dressings, we like a simple balsamic. Top with your choice of salad dressing.

Around our house, the two of us have turned to having salad about two nights a week. No cooking, and tasty. Always good variety.
