Steak with Glaze and Arugula Salad Recipe

2 Tbs. Parmesan cheese, graded
1 1/2 Tbs. butter, room temperature
1 12-oz Rib-eye steak
1 tsp. olive oil
1/4 c. balsamic vinegar
1/4 c. shallots, finely chopped
1/2 tsp. dark brown sugar, packed
4 c. arugula, lightly packed
2 large lemon wedges
salt & pepper to taste

2 Tbs. Parmesan cheese, shredded (or as much as you want!)

Parmesan Butter
Mix grated Parmesan cheese and butter in a small bowl. Season generously with salt and pepper. Set aside.

Steak
Sprinkle steak with salt and pepper. Set aside.
Heat oil in medium skillet over medium heat. Add steak, cooking to desired level. Transfer steak to a plate.

Salad Dressing
Mix vinegar, shallots and brown sugar in a bowl. Add vinegar mixture to the skillet and boil, stirring constantly, until reduced to a glaze, about 1 minute.

Assemble the Salad
Divide the arugula and shredded Parmesan cheese between 2 plates. Squeeze lemon wedge over the arugula. Slice the steak and place on top of the arugula. Top steak with Parmesan butter and drizzle glaze over salad.
