One eggplant washed and the ends peeled
One egg beaten with two tablespoons of milk
One cup of tomato sauce
Half a cup of Parmesan cheese

Directions:
Directions:
Slice eggplant thin. Dip slices in beaten egg and milk and then in flour. Fry both sides very lightly brown. Layer in glass baking dish topping each layer with tomato sauce and sprinkle Parmesan cheese over it bake for 30 minutes.
