7 cups grated raw carrots
7 cups grated raw potato
6 cups white sugar
3 cups butter or margarine
7 cups flour
4½ cups raisins
3 cups currents
7 tsp. cinnamon
7 tsp. cloves
7 tsp. nutmeg
7 tsp. baking soda (dissolved in the raw potatoes)

Directions:

Mix sugar and butter. Add carrots and mix. Add potato with the baking soda mixed in and mix together. In separate bowl, mix flour, spices and raisins together, then mix well with the rest of the ingredients. Fill quart jars 1/2 full (no more than that) and put the lids on. Steam in canner for 2 1/2 hours on electric stove. Makes 7 quarts

This is Grandma Schwartz's recipe! Oh and a favorite of your cousins Shaun and Kyle Nicloux when they were younger. They would sneak a jar each and eat it. This is very good with a warm caramel sauce when serving with a dollop ice cream if you really want to indulge
