Ingredients: 2 tbsp olive oil 2 large or 3 med onions, chopped (about 2 c.) 3 carrots, shredded ¾ tsp. marjoram, crumbled ¾ tsp. thyme leaves, crumbled 1 28 oz can diced tomatoes with their juice 7 c. of broth (beef, chicken or veg) 1.5 c. dried lentils, rinsed and picked over ½ tsp. salt ½ tsp. freshly ground pepper to taste 6 oz. dry white wine 1/3 c. chopped fresh parsley or 2 tbsp. dried parsley flakes 4 oz cheddar cheese, grated

Directions:Heat the oil in a large stockpot, and sauté the onions, carrots, marjoram, and thyme, stirring the vegetable for about 5 min
Add the tomatoes, broth and lentils
Bring the soup to a boil, reduce the heat, cover the pan, and simmer the soup for about 1 hr or until the lentils are tender.
Add the salt, pepper wine and parsley and simmer the soup for a few minutes
Serve with cheese sprinkled on each portion. |

Notes: This is one of my very favorite recipes ever. I know what you're thinking: "...Lentil soup?" You don't typically think of lentils, cheese and carrots as being a nice trio, but together with the marjoram you have a super savory, flavorful, unique, and hearty soup. Don't skip on the shredded cheddar.
