1 Tablespoon butter
1/3 medium yellow onion. chopped
1/3 cup red pepper
1/3 cup chopped spinach
1/3 mushrooms
4 eggs
1/2 cup egg whites
1/4 cup milk
1 Cup Chopped Ham
1 Cup Shredded Swiss cheese
1/2 cup Shredded cheddar
1 deep dish pie crust

Directions:
Directions:
Put one tablespoon of butter in microwavable dish, with vegetables. Cook 2 minutes. Mix eggs and egg whites in a bowl, add milk, salt and pepper. Mix well. Add vegetable mixture to egg mixture. Add cheese and stir. Pour into a pie crust. Bake 45 minutes at 375º.
