Cooked Tandoori Chicken - prepare as per recipe

2 fresh Mangos
1 bunch of fresh cilantro
1 bunch of butter head or romaine lettuce
½ bunch of fresh chopped spinach
2 limes
pinch of salt
1 seedless cucumber
2 shallots
1 red bell pepper
dash of fresh ground black pepper
2 tbsp. of extra virgin olive oil

Directions:
Directions:
1. Prepare the Tandoori Chicken on the barbecue or broil in the oven as per recipe..
2. In a bowl add chopped lettuce, spinach, fresh chopped cilantro, sliced mangos and sliced shallots.
3. Chop the red bell pepper and cucumber and add it in.
4. Squeeze the two limes and add a pinch of salt and fresh black pepper.
5. Drizzle olive oil and toss the salad.
6. Once the Tandoori chicken is done, let it rest for about 5 minutes before cutting.
7 Cut the chicken into small bite size pieces and place on the salad.
