12 bocconcini mozzarella balls
ground black pepper
12 thin prosciutto slices
1 T. olive oil
1 sprig fresh rosemary, chopped

Directions:
Directions:
Season the mozzarella balls with black pepper. Roll a prosciutto slice around each ball. Heat the olive oil in a large skillet. Cook the wrapped bocconcini, seam side down, for about a minute until the prosciutto becomes slightly crispy and the cheese begins to melt. Place on a serving platter, drizzle with a little olive oil and garnish with chopped rosemary; serve immediately.

You can also serve them on a bed of mixed greens with an additional drizzle of good quality balsamic vinegar.

Bocconcini is simply small bite sized balls of fresh mozzarella. If you can't find them, just cut two fresh mozzarella balls into about 6 chunks each.
