Salad:
6 cups arugula
4 cups fennel, shaved
3 cups baby spinach
1 cup red onion, thinly sliced
113 grams goat cheese, crumbled (or more)
2 cups pomegranate seeds
1/2 cup walnut pieces, toasted

Dressing:
1/3 cup pomegranate juice
1/4 cup orange juice, freshly squeezed
1/2 vegetable oil
2 Tbsp basil, finely minced
1 clove garlic, minced
1 tsp Dijon mustard
1 Tbsp pomegranate balsamic vinegar (optional)
salt and pepper to taste

Directions:
Directions:
Combine the dressing ingredients and put in the fridge to allow time for the flavours to develop. Mix the greens, fennel, onions and dressing together. Top with the cheese, seeds and nuts.
