1 whole chicken cut into pieces (you can substitute 3 or 4 large breasts or 8 chicken thighs)
1 teaspoon salt
3 Tablespoons butter
2 Tablespoons olive oil
1 large onion, thinly sliced
3 teaspoons ground sweet paprika
3 Tablespoons whole wheat flour
2 cups chicken broth
1 (14 1/2 oz) can crushed tomatoes
3/4 cup homemade or Greek-style yogurt
Finely chopped parsley for garnish

Directions:
Directions:
Season chicken with salt. Melt butter with oil in large Dutch oven over medium heat. Brown the chicken in batches on all sides and remove from the pan.

Add the onion to the pan and saute for 5-6 minutes, or until softened. Add the paprika and stir, then add the flour and cook, stirring for about 1 minute. Add the broth and stir until smooth and thick, then add the tomatoes. Return the chicken to the Dutch oven, cover and simmer for about 20 minutes, or until the chicken is cooked through.

Place the yogurt in a bowl and stir in some of the paprika sauce from the plan, then pour the mixture back into the plan with the chicken and stir to combine. To serve, garnish with parsley.
