Ingredients:  
Ingredients:  
1/4 cup olive oil
Four cups diced onion
2-3 carrots shredded one cup
4 28/32 oz. cans diced or crushed or ground (peeled or unpeeled) tomatoes. Buy the best.
¼ to 1/3 cup chopped garlic
1 tablespoon parsley
1 tablespoon sugar
½ cup red wine
½ stick unsalted butter
1.5 teaspoon oregano
2 teaspoon dried basil

Directions:
Directions:
Sauté onion till caramelized (8-12 minutes), add garlic and carrots (4-6 minutes)
Add tomatoes and add salt 1.5 teaspoon /pepper to taste, and spices
Bring up to temperature medium heat, Simmer 15-20 minutes
Add butter, red wine and simmer 45- 60 minutes
Puree- serve or freeze

Add any of these options:
¼ cup chopped spinach and mushroom, Worcestershire sauce, sun dried tomatoes, whole peppercorns
