4-6 beets
6 C water
1/2 C lemon juice
1 pack dry pectin (Certo)
6 C sugar
1 T butter

Directions:
Directions:
Cook beets until tender about 30 minutes. Can use these for a salad with a bit of vinaigrette dressing.
Strain juice and save 4 C
Pour 4 C beet juice in large pot. Stir in lemon and pectin.
Bring to full boil over high heat.
Add sugar and return to boil. Stirring constantly. Bring back to boil and boil for 1 minute.
Remove from heat and ladle in jars.
Process for 5 minutes.
