Chicken Marinade
2 boneless medium chicken breasts cut into bite size cubes
1 tsp. chopped garlic
1 tsp. chopped ginger
½ tsp. white pepper
1 tbsp. chili paste
⅓. cup all purpose white flour or tempura
4 tbsp. corn starch flour

Sauce
2 tbsp. of chicken broth
1 tbsp. of Thai chili paste
1 tbsp. sesame seed oil
1 tbsp. oyster sauce
1 tbsp.soy sauce
1 tsp. fish sauce
½ tsp. black pepper
1 tsp. sugar
1 tbsp.chili oil

Other ingredients
1 onion chopped
¼ cup carrots
1 cup of unsalted cashew nuts
¼ cup chopped red bell peppers
¼ cup chopped green bell peppers
¼ cup chopped yellow or orange bell peppers
¼ cup mushrooms - sliced
¼ cup sliced celery
1 tsp. chopped garlic
1 tsp. chopped ginger
5-6 dried red chili peppers
2 - 3 green onions cut to 2" long

Directions:
Directions:
1. Cut up boneless chicken into bite size cubes and place them in a mixing bowl. Add ginger, garlic, salt, black or white pepper and chili paste. and let the chicken marinate for about 10 - 15 minutes.
2. Mix the flours and rub them on the chicken until they are fully coated..
3.Combine all the ingredients for the sauce and set aside
4 Chop the vegetables and place them in a bowl.
5. Heat about 5 - 6 tbsp. of oil in a wok on high and add the dried chilies. When they start turning colour, remove them on to a plate.
6. In the same oil, fry cashew nuts and when they are golden brown, remove them on to the same plate as the dried chilies.
7 Using the same oil, fry the chicken pieces until they turn golden brown and crispy. Remove them from the heat and put them on the same plate as the cashews and chilies. Discard the oil.
8. Add about 2 tbsp. of oil in the same wok and add ginger and garlic. Next add the vegetables and stir fry for a minute. Do not overcook the vegetables. Remove and set aside
9. Add the sauce, and cook until it starts to thicken.
10. Add the chicken, cashews, vegetables, red chilies and mix the sauce.
11. Add the green onions and remove from the heat.

Serve with rice.
