1/2 pork loin
4 cups water
1 cup vinegar
1 Tablespoon salt
1/2 Tablespoon red pepper flakes
Black pepper
1/2 cup oil
1 small can tomato sauce

Directions:
Directions:
Place the pork roast in a smoker and cook.

Combine water, vinegar, salt, peppers and oil in a sauce pan and simmer.

while meat is smoking, periodically swab the meat with a BBQ swab or a wooden spoon wrapped in cheese cloth.

40 minutes before the meat is done add can of tomato sauce and continue to swab meat.

When pork roast is done, bring the sauce to a boil, slice meat and layer slices with sauce in a serving bowl.
