1/2 Tbsp olive oil
2 Tbsp small-diced yellow onion
1 clove garlic, chopped fine
1 c. Arborio rice
1/3 cup dry vermouth
2 c. chicken broth
1 c. heavy whipping cream
1/3 c. freshly-grated Parmesan
4 Tbsp. (1/2 stick) butter.

Directions:
Directions:
1-In a medium ovenproof pot over medium heat, add the olive oil, then the onion and garlic, and cook, stirring, till softened but not brown (3-4 minutes).
2-Add the rice and stir to coat, mixing well. (1 minute).
3-Add the vermouth and cook, stirring until the liquid has been absorbed, also about a minute.
4-Stir in the chicken broth and cream and bring to a boil over medium heat.
5-Cover with a lid and place in the oven for about 20 minutes till all the liquid is absorbed and rice looks creamy.
6-Remove from the oven and stir in the cheese and the butter.

(I put some chopped fresh mushrooms in with the onion and garlic, then stirred in some frozen peas and shrimp or lobster (cooked) at the end…or whatever you like.)
