3 T. sugar
3/4 tsp. grated lemon peel (or juice)
6 T. butter
1 slightly beaten egg yolk
1/2 tsp. vanilla
3 8 oz. packages cream cheese, softened
1 c. sugar
2 T. flour
2 eggs
1 egg yolk
1/4 c. milk
1/3 tsp. salt
1 can Cherry Pie Filling (if desired) or Topping of choice

For crust combine 3/4 c. flour, 3 T. sugar, and 1/2 tsp. lemon peel. Cut in butter until crumbly. Stir in 1 slightly beaten egg yolk and 1/4 tsp. vanilla. Pat 1/3 of the dough onto the bottom of an 8 inch springform pan with the sides removed. Bake at 400º for 7 minutes or until golden. Cool. Butter the sides of the pan. Attach to the bottom. Pat the remaining dough to a height of 1 3/4 inches. Prepare the filling by beating the cream cheese with remaining lemon peel and remaining vanilla. Add 1 c. sugar, 2 T. flour, and 1/4 tsp. salt. Blend. Add 2 eggs and 1 egg yold. Beat until just blended. Stir in milk. Turn into crust-lined pan. Bake in 450º oven for 10 minutes. Reduce heat to 300º and bake for additional 55 minutes (more if needed until the center appears set). Remove from oven. Cool 15 minutes. Loosen sides of cheesecake from pan with a spatula. Cool 1/2 hour more. Remove the sides of the pan. Cool 2 hours longer. Top with 1 can of cherry pie filling or with topping of your choice. Chill for at least 2 hours.
