1 minced onion
1 tbs oil
4 c sweet spuds, cooked
2 c milk
2 c beef broth
1 tsp Rosemary
¼ c orange juice
1 tsp grated orange peel
salt & pepper to taste

Directions:
Directions:
In a large pot, soften onion in oil. Add sweet spud, milk, broth and rosemary, bring to a boil. Simmer 5-7 m inutes, add orange juice and peel. Puree soup in blender, add salt and pepper to taste.
