1 1/2 # small new potatoes, washed
1 T olive oil
1 medium onion, chopped
1 small garlic clove, crushed
1 C chicken broth
1 C fresh parsley
1/2 t pepper

Directions:
Directions:
Peel a strip of skin around the middle of each potato. Put the potatoes in cold water and set aside.
Heat oil in a large skillet over medium high heat. Saute the onion and garlic for about 5 minutes. Add broth and 3/4 c of the parsley. Mix well. Bring to a boil.

Place the potatoes in a single layer in the skillet and return to a boil. Simmer, covered for 10 minutes or until potatoes are fork tender.

Remove from the heat and place potatoes in serving bowl. Pour sauce over and sprinkle with remaining parsley.
