1 Tbs. olive oil
1 Tbs. butter
3 medium leeks, well rinsed and sliced
2 large red bell peppers, seeded and cut into thin strips
2 lbs. green beans, trimmed
1 lg. clove garlic, minced
1 1/2 tsp. salt
1 tsp. Tabasco pepper sauce
1 tsp. grated lemon peel
1/4 c. sliced natural almonds, toasted

For a different version of these green beans, substitute an onion for the leek, and omit the salt, Tabasco sauce, lemon, and almonds.

In a 12-inch skillet over medium heat, heat oil and butter, add leeks. Cook 5 minutes, stirring occasionally. Add red bell peppers; cook 5 minutes longer or until vegetables are tender.

Meanwhile, steam green beans 5 minutes or until crisp-tender. Add beans, garlic, salt, Tabasco sauce and lemon peel to skillet. Toss to mix well. Sprinkle with toasted almonds. Serve immediately.
