2 eggs, separated
1 cup sugar
1/4 tsp salt
1/2 cup shortening
1 tsp. vanilla

1 1/2 cup sifted flour
1 tsp baking powder
1/3 cup milk
1 1/2 cups blueberries

Directions:
Directions:
Beat egg whites until beginning to stiffen, add 1/4 cup sugar and beat further until stiff peaks form. Cream together the shortening, salt and vanilla with mixer on medium speed. Add remaining sugar gradually. Add unbeaten egg yolks and beat until light and creamy. Add sifted dry ingredients alternating with milk. Fold in the stiffened eggs whites, and then fold in the blueberries. (lightly coat blueberries with flour before adding to mixture so they don't settle at the bottom of the pan). Pour into a greased and floured 8x8 or 9x9 inch pan. Sprinkle top with granulated sugar and bake at 350 degrees for 50-60 minutes.
